The unique climatic conditions of the King and Alpine Valleys are attributed to the altitude, cool alpine breezes, high rainfall and snow run off as well as the abundance of natural rivers, lakes and springs which ensure the water is naturally the coolest, clearest and cleanest.

The cool ripening conditions prevent high levels of transpiration thus allowing grapes to retain natural acids, sugars and esters creating intense, lifted fruit flavours.

The soft morning sunlight, essential for photosynthesis, is the most effective in producing the intense fruit characters. By shielding the grapes from the afternoon sun, using specifically developed canopy management systems, the protection of delicate fruit flavours is assured.

Central to the process is the “ballerina” method of canopy management that allows gentle morning sunlight as well as the soft mountain breezes to delicately ripen the fruit, producing vibrant colours and intense fruit flavours

2004 Gapsted Ballerina Canopy Sauvignon Blanc
Our 2004 Sauvignon Blanc was selected from premium cool climate vineyards in Victoria's King Valley. The warm days developed ripe tropical fruit characters and the cool nights ensured typical crisp, grassy sauvignon blanc flavours. The fruit was harvested at night, had skin contact for 12 hours and fermented cold for 4 weeks to ensure the fresh characteristics of this variety were pure. The wine was bottled under screw cap shortly after fermentation and cool stored prior to release.

The wine displays intense aromas of lychee, lime and fragrant lemon grass. The palate is alive with luscious gooseberry and nectarine with a clean grassy finish. Enjoy now!

2001 Gapsted Ballerina Canopy Chardonnay
Several of the best parcels were isolated and barrel fermented in new French oak for 12 months. Partial malolactic fermentation was conducted to impart a creamy richness to the wine. Only the best barrels selected for the final wine with some non-barrel aged added prior to bottling for freshness and zest.

Intensity of flavour and aromas are the hallmark of this Chardonnay. Stone fruit, melon, and honey aromas lead to a rich, creamy and elegant palate. These characters are balanced by buttery and nutty oak integration with a subtle crisp finish.

“Bright straw-green; a spotlessly clean, fruit-driven bouquet with citrus/grapefruit aromas is supported by perfectly integrated oak; the elegant, light to medium-bodied palate has largely eaten up the new French oak in which the wine underwent fermentation and malolactic fermentation; good mouthfeel due to creamy malolactic inputs.”

2000 Gapsted Ballerina Canopy Merlot
The 2000 Merlot was aged in new American oak barrels for 18 months prior to blending. The best wines from individual barrels were selected according to colour and fruit concentration.

Spicy plum and fruitcake aromas underpinned with complex truffle and chocolate toasty oak. The silky smooth palate shows juicy varietal rich berry fruit supported by velvety fine grained tannins.

1999 Gapsted Ballerina Canopy Cabernet Sauvignon
The 1999 vintage saw a long warm ripening period which produced small berries with intense colour, tannins and flavour. The fruit was selected from high elevation sites, in the King and Alpine Valleys, which benefited from cool alpine breezes and warm sunny days. This wine was barrel fermented and matured in American oak barriques for 27 months prior to blending and bottling. Wines from individual barrels were selected based on their complexity, structure and balance.

Intense ripe blackcurrant and cassis aromas are complemented by cedar oak complexity and well integrated tannins. The palate is rich and full bodied with sweet fruit and vanilla characters. The finish is outstanding with depth and persistence. Exceptional drinking now or age over the next 6 – 8 years.
